Fun Fact: Pineapples are packed with bromelain, an enzyme that aids in digestion or proteins and boosts white blood cell function!

INGREDIENTS
• 3 cups fresh pineapple, diced
• 1 cup cherry tomatoes, diced
• 1/2 cup red onion, diced
• 1 bell pepper, diced
• 1/4 cup parsley/cilantro, chopped
• 4 tbsp lime juice
• 1/2 tsp red pepper flakes

INSTRUCTIONS
• Combine all ingredients into a serving bowl, adding additional lime juice and/or red pepper flakes to taste.
• Enjoy with whole grain tortilla chips or as a topping for your favourite veggie tacos!
